I’m Sabrina Maddock, Founder and Wine Director. Based in Sydney, I work with small producers to bring their wines to restaurants, neighbourhood wine bars, indie bottle shops, and your home. I also run events that make people grin and say, “Wow. Let’s do that more often.”
Where it all began.
Before founding Bacchanalia, I was Global Head of Recruitment at Accolade Wines. That role introduced me to the people behind the bottles and made me fall in love with the commercial side of wine: the relationships, the ambition, and the work that turns a producer’s vision into something we enjoy in the glass.
Bacchanalia grew from wanting to play a more hands-on part in that world, championing small producers and connecting their lovingly crafted small-batch wines with Sydney’s wine lovers.
Small producers. Huge personalities.
I’m drawn to family-run producers, many of whom grow their own grapes.
The wines I choose are made by good humans, and their quality makes me proud to represent them. My tasting panel has assessed over 1,700 wines. Only 5% have earned a place in the Bacchanalia portfolio.
I have a particular soft spot for Mediterranean varieties that make me pause, sip again, and go, “Gods alive, that is incredible.”
What’s in my glass?
Amarone has my heart. I also love aged whites, particularly Riesling and Semillon, followed by Cabernet Sauvignon and Chardonnay. My favourite wild cards are Aglianico and Etna Bianco.
